Today, we made a prototype of the limited-time Awaji Island Burger with our staff, which will go on sale on Saturday, June 11!
Hamo (Japanese conger eel) is the summer fish of Awaji Island!
Every year at this time, we sell a hamo cutlet burger made with hamo hamo, but this year we are trying to upgrade the hamo burger.

This year I made my usual ume mayonnaise sauce with plenty of ◯◯◯◯ added to the sauce.
I changed it to try to bring out the texture and acidity when eaten.
I tasted it and the first thing I said was "Delicious!" (*^-^*)
I originally loved the Awaji Island hamo cutlet burger, but the new addition of texture and acidity has further evolved the balance between the hamo and the burger (^^^)!
